Fill a large kettle with
enough water to cover lobsters. Bring the water to a rolling boil.
Be sure to drop lobsters in head first to prevent their tails from
splashing boiling water.
FOR
HARDSHELL LOBSTER: 20 minutes for the 1st pound
Then add 1 minute for each 1/4 pound
ie: 1-1/4 lb. lobster = 21 minutes
1-1/2 lb. lobster = 22 minutes
1-3/4 lb. lobster = 23 minutes
FOR
SOFTSHELL LOBSTER: 12 minutes for the 1st pound
Then add 1 minute for each 1/4 pound
ie: 1-1/4 lb. lobster = 13 minutes
1-1/2 lb. lobster = 14 minutes
1-3/4 lb. lobster = 15 minutes

Blanched Lobsters
Blanched:
Blanched lobsters are flash steamed and cooled on their backs to
retain moisture and juices. For best results, place lobsters on
their backs in a preheated steamer for 5 to 5 1/2 minutes and
remove. That's it! Your lobsters will be moist, juicy and ready
for the most delicate of pallets.

Frozen:
To prepare, take the lobster directly from the freezer and place
it on its back in a preheated steamer for 6 1/2 minutes. Remove
from steamer and serve. What could be easier!
Steaming
vs. Boiling:
As with any product, steaming is always the preferred
method of cooking. It retains and enhances the flavor of food. But
boiling is possible with our product. Just place the lobsters into
boiling water and follow the same cook times for blanched and
blanched frozen.
